I’ve been waiting more than a decade for this. "It’s only chicken," you say. You are partially correct. Rex’s is the only chicken that takes me back to my youth (well, aside from my great aunt Nonnie’s fried chicken, but that’s another story altogether!).
My friends and I dined on the delicious boneless nuggets and honey-topped fry bread when we were granted access to leave the Jenks campus at lunch. We also frequented what I recollect to be the last of the Rex’s in a former QuikTrip at 101st and Sheridan. It has been a jewelry store for years, but every time I drive by I think of eating there with my girlfriends.
Mom and I hit the recently opened Rex’s at 111th and Memorial (behind Starbuck’s) today, and it was just as I remember. Crispy, juicy, all-breast nuggets, and slightly sweetened fry bread dipped in honey. The menu is still pretty simple, offering only a few chicken options: bite size, sandwich, po’ boy, and atop a salad. The only other choices are sides and dipping sauces – and whether or not you want your chicken kicked up with jalapeños.
