Sharpen your culinary chops

Catherine DeCamp is now offering Chef Bootcamp, a 7-week intensive course for those who are ready to take their cooking to the next level, at Sage Southside. Chef Richard Schlosberg, Executive Chef of McBirney Mansion will teach the classes which begin Sept. 1, and will be held every Thursday evening from 6:30-9:30 p.m. The cost for the seven-week course is $875.

Classes include:

Class 1: Sanitation and safety, equipment identification, names and uses, mis en place, recipe reading
Class 2: Fruits, vegetable, and herb identification and preparation
Class 3: Meat, poultry and game identification and fabrication, fish and shellfish identification and fabrication
Class 4: Other grocery staples, stocks, and soups
Class 5: Sauces: “Mother” Sauces and variations of each, pan sauce techniques
Class 6: Field Trip!
Class 7: World cuisine/fusion: discussion of world pantries and flavors, culinary theory, plating theory, menu development
